Oats are also good for you, but can raise your blood sugar in a hurry! But when you combine oats with healthy fats (like unsweetened coconut milk and chia seeds), it helps to minimize the sugar spike. Even better is to add some protein to your meal by having hard-boiled or deviled eggs on hand to eat with your oats 😊.

When you cook a starch (such as oats) and then cool it, you create SCFA (short-chain fatty acids) which your colonocytes (they maintain the lining of your gut wall) just love! So enjoy this recipe, knowing you’re doing lots of good things to your body!

Blueberry Banana Overnight Oats

Ingredients:
½ cup unsweetened coconut milk
½ cup old-fashioned oats
½ tablespoon chia seeds
½ banana, mashed
1 teaspoon (real) maple syrup
Pinch of unrefined sea salt
½ cup fresh blueberries (any type of berry will do!)
1 tablespoon unsweetened flaked coconut (optional)

Instructions:
Combine coconut milk, oats, chia seeds, banana, maple syrup and salt in a pint-sized jar and stir.
Top with berries of choice and coconut (if desired).
Cover and refrigerate overnight.

This makes one serving, but you can make up to 4 jars at once to keep in the fridge for quick grab-and-go breakfasts throughout the week.
