Guacamole with Baked Plantain Chips

Move over tortilla chips!  These plantain chips are my new friend!

Avocados, a favorite of mine anytime, are a great source of HEALTHY fats and fiber, plus they contain quite a few vitamins and minerals, including magnesium, B6, vitamin C, vitamin E, and folate.

And plantains, similar to a potato in carb content, and are a rich source of fiber, vitamins A, C, and B-6, and the minerals magnesium and potassium.  Try them sliced and then baked, as in this recipe!  The plantains need to be just ripe enough to slice, but not too ripe or they will be too sticky to handle!
