Secret Ingredient Meat Rub
Today I am going to share with you my “secret ingredient” I use on any meat that we cook on the grill. I hope you aren’t expecting anything fancy because I really am a very basic cook. Fast and easy is the way I roll!
Anytime you cook meat on the grill, some fat will drip down. It’s bound to happen! When it does, a chemical called polycyclic aromatic hydrocarbons (PAHs) is formed. PAHs are formed when fat and juices from meat are grilled directly over a heated surface or open fire drip onto the surface or fire, causing flames and smoke. The smoke contains PAHs that then adhere to the surface of the meat. (1)
Since these PAHs can be carcinogenic (though conclusive human studies are lacking), I figure that it can’t hurt to have a high amount of antioxidants in the rub of the meat. Turmeric is a very high antioxidant, especially when combined with black pepper, and it’s included in my rub.
Secret Ingredient Meat Rub
Use on Chicken, Beef, or Pork
Ingredients:
Sea Salt
Black Pepper
Onion Powder
Garlic Powder
Turmeric
- Spread pieces of meat out on a pan or cookie sheet.
- Sprinkle with sea salt, black pepper, onion powder, garlic powder and turmeric. (I try to use twice as much onion powder as garlic powder.)
- Rub with avocado oil, then Coconut Aminos (alternately you could use soy sauce).
- Let sit a little bit and then grill!
